stabilit\u00e0 del vino durante la fase di commercializzazione.<\/span><br \/>\n<span style=\"color: #ffffff;\">Proprio per la variabilit\u00e0 indotta dall\u2019evoluzione della struttura e del contenuto in colloidi protettori, i metodi di ottenimento e di controllo della stabilit\u00e0 tartarica non sempre sono risultati adeguati allo scopo.<\/span><br \/>\n<span style=\"color: #ffffff;\">Un mezzo informatico, quale\u00a0<strong>Mextar&#x2122; 2.0, che tenga conto, oltre che della composizione del vino e degli equilibri dei sali tartarici in soluzione, dell\u2019esperienza e delle esigenze dell\u2019enologo<\/strong>, che attraverso simulazioni pu\u00f2 verificare quali siano le condizioni pi\u00f9 idonee alla stabilit\u00e0, certamente rappresenta un progresso e una reale possibilit\u00e0 di soluzione del problema.<\/span><br \/>\n<span style=\"color: #ffffff;\">La possibilit\u00e0 di\u00a0<strong>prevedere il pH del vino dopo FML e dopo le operazioni di
