Piero Nulli<\/div><div class=\"text-block-content hongo-text-block-3 last-paragraph-no-margin\"><p><span style=\"color: #ffffff;\">L\u2019anidride solforosa \u00e8 da sempre l\u2019additivo principale usato nella produzione vinicola e la sua storia in Italia \u00e8 indissolubilmente legata alla societ\u00e0 Esseco, per la quale ha rappresentato un prodotto fondamentale fin dalla sua origine. L\u2019 SO<sub>2<\/sub>, infatti, era usata nell\u2019industria durante gli anni successivi alla prima guerra mondiale, come fluido frigorigeno, prima dell\u2019utilizzo dell\u2019ammoniaca e del freon, e da qui \u00e8 partita la nostra esperienza nel settore. Successivamente l\u2019impiego si \u00e8 allargato anche ad altri ambiti applicativi nell\u2019industria conserviera, nella sbianca, nell\u2019industria cartaria, negli zuccherifici, nell\u2019industria alimentare in genere e, specificamente, nel mondo enologico. La simbiosi tra l\u2019azienda ed il prodotto \u00e8 stata talmente forte da portare l\u2019originaria F.lli Nulli, nata nel 1921, a cambiare denominazione in Esseodue spa dal 1969 al 1988 quando \u00e8 divenuta Esseco. In realt\u00e0 Esseco, nel corso del tempo, non si \u00e8 limitata a dedicarsi alla sola produzione dell\u2019anidride solforosa, ma ha seguito l\u2019evoluzione del mercato del vino individuando e proponendo anche altre forme di somministrazione della anidride solforosa e nuovi servizi per le cantine. In tal senso l\u2019anidride solforosa \u00e8 stata progressivamente prodotta da Esseco anche in forme chimiche e fisiche diverse dalla forma di gas liquido compresso e liquefatto in recipienti a pressione: fin dagli anni trenta, infatti, era stata avviata la produzione del metabisolfito di potassio in forma cristallina, che ha costituito un valido veicolo per l\u2019apporto dell\u2019SO<sub>2<\/sub> in modalit\u00e0 facile all\u2019impiego, evitando l\u2019utilizzo di un gas in pressione che richiede una maggior cautela. In anni pi\u00f9 recenti poi, sempre nell\u2019ottica di facilitarne l\u2019uso e soprattutto il dosaggio, Esseco ha sviluppato l\u2019impiego di soluzioni acquose dei suoi sali: l\u2019attenzione al dosaggio oculato \u00e8 andata via via crescendo negli anni ed \u00e8 stata fondamentale per ottenere il massimo dei vantaggi applicativi, minimizzando i rischi derivanti dall\u2019eccesso di dosaggio. Ancora una volta, dalla produzione dell\u2019ammonio bisolfito soluzione che avveniva da diversi decenni per applicazioni industriali diverse, Esseco ha sviluppato l\u2019impiego di questo prodotto in enologia negli anni \u201890, nella fase della fermentazione alcolica, ove il catione NH4<sup>+<\/sup> contribuisce come utile nutrimento dei lieviti. In termini di qualit\u00e0, l\u2019azienda produce oggi anidride solforosa e i suoi sali derivati, secondo gli standard richiesti dalla moderna industria alimentare, in accordo anche a tutte le certificazioni volontarie nelle quali la nostra societ\u00e0 crede e si impegna a perseguirne gli obiettivi per un miglioramento continuo. In particolare la certificazione ISO22000 garantisce la produzione e la fornitura conformi alla legislazione alimentare coerentemente con le esigenze delle cantine moderne e degli stabilimenti alimentari sia europei che mondiali. Infine, lo sguardo attento verso le tendenze dei mercati e la conoscenza dell\u2019evoluzione del settore ha portato l\u2019azienda a guardare il problema dal punto di vista dell\u2019obiettivo, ovvero del controllo microbiologico, pi\u00f9 che del semplice prodotto.
